Sometimes the garden or farmers market yields an excess of certain crops or comes at a time when you are too busy to put too much time into creating recipes around specific vegetables. Springtime tends to be a time of excess greens that can be frozen for later use in smoothies and winter soups. In summer, bountiful tomatoes and summer squash can be frozen on their own or made into pasta sauce or salsa and then frozen. Fall brings root crops and fruits that can be stored in a variety of ways. Some local foods available in SW Colorado are given as examples from our area — check locally for your best items.
While in season, stock your freezer with:
- Applesauce
- Pumpkin puree
- Frozen green beans, broccoli, & more
- Frozen fruit

- Applesauce can also be made by coring the apple, leaving the skin on, and pureeing with a blender or stick blender when cooked.
- Kitchen Sink Pasta Sauce (pg 76) – Local ingredients: Onions, garlic, tomatoes, herbs, & choice of celery, beets, carrots, zucchini, summer squash, green beans, peas.
- Salsa – Local ingredients: Tomatoes, onions, herbs.
- Applesauce – Local ingredients: Apples, honey.
